タイトル: Smoked Mackerel Fish Cakes / スモークした鯖のつみれ

[ノーズ] まず太陽、砂浜、波、そしてピートを燃やしてのビーチでのBBQ。エビ・五香粉を効かせた豚バラ肉・鯖・マシュマロの焼けた香り。
[パレット] カラメルにしたチリソース味のクリスピーな豚バラ肉、塩と黒胡椒の効いた鯖のつみれ。

The immediate response nosing this one neat was one of sun, sand and surf – we were on a beach with a peat fuelled barbeque going and next to shrimps and pork belly with Chinese five spice, some mackerels and marshmallows were being roasted. On the taste, the pork belly was very crispy and served with a caramelized chilli sauce, while the mackerels were in fish cakes seasoned with smoked sea salt and black pepper. With water we imagined sitting on the harbour wall and watching the fishing boats bringing in their catch of the day whilst enjoying a fresh crabmeat sandwich.
